Hassle Back Sweet Potatoes
- 4 Medium Sweet Potatoes, Washed, Dried
- 1 Tbsp Unsalted Butter, Melted
- 1 tsp Olive oil
- 1 tsp Fresh Thyme, Chopped
- 1 Clove Galric, Grated on Microplane
- Salt and Pepper, to Taste
- 1/3 Cup Sour Cream
- 1 Scallion, Thinly Sliced
Preheat oven to 425 degrees F. Line baking sheet with aluminum foil. Make a series of 1/8 inch slices along each potato, slicing 2/3 of the way through. Stir together the butter, oil, thyme garlic and salt and pepper in a bowl. Rub each potato with butter mixture, getting in between each slice. Place on baking sheet and roast until center of the potatoes are tender and crispy on the outside, 1 hour. Halfway through the cooking run a fork gently across the tops of the potatoes with a little pressure to fan out the slices on each potato. Meanwhile, combine the sour cream and scallion with a pinch of salt and pepper. Serve the sauce with the potatoes.
