Quinoa, Oat And Apple Protein Muffins1 cup cooked quinoa 1 cup quick oats, uncooked 1/2 teaspoon cinnamon (plus extra for dusting before baking) 1/2 teaspoon nutmeg 2 tablespoons of Genepro Protein by Musclegen Research (find it on Amazon) *optional 1/3 cup coconut sugar (plus extra to sprinkle on top before baking) 1 tablespoon maple syrup or to taste 1 cup chopped apple 2 eggs, lightly beaten Preheat oven to 350 Mix first 6 ingredients then add in maple syrup. Taste to make sure it's sweet enough before adding eggs. Fold in eggs and apples to the quinoa & oat mixture. In a coconut oil greased (or use liners) muffin tin fill with mixture. Sprinkle coconut sugar and cinnamon on top of the muffins. Make sure to spray the top of the pan incase they bake over. Bake for 15-20 minutes depending on the size muffin tin you use. Run a knife around the edges to loosen muffins before removing them. Enjoy!
