Carefully remove parchment paper from the cookie sheet and allow cookies to cool completely on the parchment. This is important since they are thin, fragile cookies. Repeat with the remaining cookie dough. Store cookies in a air tight container separated by paper towels or parchment. This dough also freezes well. Place scoops of dough on parchment and freeze.
