Paleo Honeycomb Candy
- 1/2 cup honey
- 1/2 cup coconut sugar syrup/nectar or maple syrup
- 1 1/2 tsp baking soda
- Dark chocolate (at least 70% sweetened with coconut sugar for a paleo version)
Heat honey and coconut sugar syrup in a sauce pan over medium heat till it reaches the hard crack stage, 300 degrees. Then whisk in baking soda thoroughly and quickly. Pour hot mixture on to a parchment lined pan and allow to cool. Break up candy and dip or drizzle pieces in melted chocolate. Store in a air tight container once chocolate has set. Enjoy!
