Eggs In A Cloud
Large cage-free egg
Per egg: Pinch of salt, garlic powder, and dried/fresh chives
Optional- cheese, crumbled bacon, or sausage, paprika
Preheat oven to 450 and line a baking sheet with parchment paper. Separate eggs and carefully place whole yolks in a small bowl. In a clean, dry bowl whisk egg whites with a hand mixer to stiff peeks. Carefully fold in spices and filling of choice. Make a "cloud" shape with the egg whites on prepared baking sheet. One cloud per egg used. With the back of a spoon make a well in the center of egg whites. Bake for 2 minutes. Remove from the oven and put the egg yolk in the well. Bake for 2-3 more minutes or till yolk is cooked as desired. Top with chives and a sprinkle of paprika. Serve immediately.
