Simple Paleo Chocolate Mousse
1 can full fat coconut milk- chilled overnight in the fridge or for an hour in the freezer
2-3 Tbsp cacao/cocoa powder*
1 1/2 tsp vanilla extract**
2-3 Tbsp coconut sugar syrup/honey
Scoop out the coconut cream leaving behind the water. You can save the coconut water and use that for smoothies if you wish. Beat the coconut cream with a mixer till it's broken up a little bit. Add in cocoa powder, vanilla, and coconut sugar syrup. Beat all ingredients together till smooth. Eat right away or refrigerate. Serve with fruit or whipped coconut cream if desired. Enjoy!
* I used 1 tbsp Dutched cocoa and 1 1/2 raw cacao to give it a dark chocolate flavor
** Be sure there is no added sugar or high fructose corn syrup
