Gluten Free Buffalo Chicken Pull Apart Bread
- One batch of Gluten Free Italian Bread Rolls
- 1 rotisserie chicken, shredded
- 1 cup buffalo sauce
- 1/3 cup butter melted
- 2 1/2 cups shredded cheese of choice (I used whole milk mozzarella mixed with cheddar jack)
- Ranch Dressing for dipping
Grease a loaf pan and line with parchment. Prepare Italian Rolls, but instead of forming into rolls allow the dough to rise in the bowl for 30 minutes. While it is rising mix together shredded chicken, buffalo sauce, and 1 1/4 cups of cheese. With wet hands pat out about 1/4 cup of dough at a time- about 1/4 an inch thick and the size of your loaf pan. Place dough on a sheet of parchment. Brush dough with butter, top with a layer of chicken and sprinkle with cheese. Repeat the steps. Stacking the dough, butter, chicken, and cheese until the ingredients used up- leaving 2-3 tbsp of cheese for topping. Turn your loaf pan vertical and carefully slide the layered dough into the pan. You can pat out the dough once it's in the pan if your shape is a little off. Sprinkle with cheese. Bake at 350 for 45 minutes or 'till brown and done throughout. Remove from the loaf pan and serve with ranch dip. Enjoy!
