Chocolate Mug Cake with Strawberry Cream
3 T unsweetened almond milk
1 T almond butter
3 T coconut sugar simple syrup
1 t coconut oil
2 T cocoa powder
3 1/2 T almond flour
¼ t baking soda
1/8 t vanilla
Dash of salt
Strawberry Whipped Cream
1 can full fat coconut milk - chilled
1/4 cup strawberries, pureed
Preheat oven to 375. Lightly grease a oven safe mug or a couple ramekins. Whisk together milk, almond butter, simple syrup, and coconut oil. Mix in remaining ingredients and whisk till smooth. Pour into prepared dish and bake for 25-30 minutes. While baking whip together the top cream from the chilled can of coconut milk. Whisk in pureed strawberries. Chill till ready to serve. Allow cake to cool and set up a little before enjoying!
