Preheat oven to 350 Cut the top off apples and scoop out the center leaving 1/4-1/2 an inch of flesh. A melon baller worked well for this step. Remove and discard the core. Chop the apple bits you scooped out. Place in a sauce pan with coconut sugar, lemon juice, cinnamon, Organic Smart Balance, vanilla, and salt. In a small bowl mix water and corn starch. Add to sauce pan with apples and cook over medium heat till apples have softened and sauce has thickened. Taste apple sauce and adjust sweetness and spices if needed. Place hollowed apples on a parchment lined baking pan. Fill each apple with apple sauce. Cut pie crust into strips if you wish to do a lattice pattern on apples. Or cut out circles and place on each apple cutting a slit in the center of the crust to let steam escape. Brush crust with egg and place in the oven for 20 minutes or till apples have softened and crust is brown. Top with caramel if desired.
